I paste below a brief fragment of that site's text that gets to the point. The building in question took on a variety of functions over the years since the 17th century, but its original function as a "corral" was only discovered in 1950. This discovery prompted the excavation and restoration of the corral. Getting to your question, it seems that its survival prior to that year was fortuitous but not planned. 
 
"En el siglo XVIII, con la prohibición de los corrales, se convierte en el Mesón de la Fruta, conociéndose desde mediados del siglo XIX como la Posada de las Comedias.
En 1950, el dueño de dicha posada, mientras realizaba unas obras, encontró una baraja española pintada a mano fechada a principios del siglo XVIII. Puso el hallazgo en conocimiento del Ayuntamiento y su Alcalde, Julián Calero, la trasladó al gobernador civil de la provincia. Don José María del Moral, por éste y otros documentos, supuso que en ese lugar podría haber existido un corral de comedias."

	I was teaching about the Spanish Golden Age in my History of Theatre class, and a student asked why the theatre in Almagro had been preserved from the 17th century.  Does anyone know why the corral survived for over 300 years?
